#SundaySupper is a group of bloggers who are on a mission to bring back super around the family table in every home. This week Susan at The Girl in the Little Red Kitchen is hosting and the theme is dishes that keep you warm.
I have a wonderful book called The Soup Bible. When sunday supper decided on this theme I went straight for that book. There is a section called winter warming soup! Perfect! I want to try all of them, but this one really stuck out to me. It has a rather interesting process. It is very simple. However, it gets unique at the end. You ladle the soup into single serving bowls and then crack an egg into it and put bread on top of that and bake it for a few minutes to poach the egg. It’s brilliant and makes for a full meal.
Next, I did a little research about this soup. And apparently this soup is used as a hangover remedy. I did not have a hangover when I made this, but I can see how this would be soothing if one was sick. I would also use this if you have a cold. It has a nice hearty quality without being too complicated. And if I were being honest I would tell you that I think most soups have some sort of healing quality. They always make me feel so rejuvenated. I could live off soup during the winter.
Spanish Garlic Soup
This recipe is adapted from The Soup Bible by Debra Mayhew.
Ingredients
- 2 tablespoons olive oil
- 4 large garlic cloves, peeled
- 4 slices French bread, about 1/4 inch thick
- 1 tablespoon paprika
- 1 quart chicken stock
- 1/4 teaspoon ground cumin
- a pinch of saffron strands
- 4 eggs
- salt and ground black pepper
- parsley
Directions
1. Heat the oven to 45o degrees F. Heat the oil in a large pan. Add the whole garlic cloves and cook until golden, remove and set aside. Fry the bread in the oil until it turns a golden brown; set aside.
2. Add the paprika to the pan and fry for a few seconds. Stir in the chicken stock, cumin, and saffron. Add the reserved garlic, crushing the cloves with the back of a wooden spoon, and season with salt and pepper. Cook for about 5 minutes.
3. Ladle the soup into 4 ovenproof bowls and break 1 egg into each one. Place a slice of fried bread on top of each egg. Put the bowls in the oven for 3 to 5 minutes until the eggs are set. Sprinkle each portion with parsley and serve at once.

I know that cookbook, it’s a good one. Also have your heard the term “Jewish Penicillin?” It refers to chickens soup, but basically it is what you say above, soup heals!
