Fluffy Monsters (Pancakes)


These are the pancakes I ate with the lemon curd.  These are amazing!  We got the recipe from my friend Beth.  The first time I made these my roommate and I renamed them Fluffy Monsters, because they are huge and amazingly fluffy.

When I made this batch I used whole wheat flour and it worked really well.  I am experimenting with different types of flour, not really the most adventurous flour to use, but it is a start.


Fluffy Monsters


  • 1 1/2 cup milk
  • 4 tablespoon white vinegar
  • 2 cup flour
  • 4 tablespoon white sugar
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2  eggs
  • 4 tablespoon butter, melted


1. In a big bowl combine milk and vinegar (these two together makes “sour milk”), let stand for 5 minutes.

2. In a medium bowl: combine dry ingredients, whisk.  Add eggs and melted butter to soured milk, whisk.  Add dry ingredients to wet, whisk to combine.

3. Make on griddle, cast iron, or non-stick skillet.
