At the dinner party my friend, Leslie, made some delicious chicken!! I love fried chicken and I always have difficulty making it. I just have not found the perfect recipe or timing.
But this chicken went wonderfully with the rest of the meal. Oh I have such good cooks as friends!!!
Southern Buttermilk Fried Chickend
This recipe was made by my friend Leslie and she found it at TLC Cooking.
- 2 cups all-purpose flour
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon oregano
- 2 cups buttermilk
- 2 cups grapeseed oil
- 3 pounds chicken legs
1. Combine flour, paprika, basil, garlic powder, pepper and oregano into shallow bowl. Pour buttermilk into medium bowl.
2. Heat oil in heavy, deep skillet over medium heat until oil reaches 340 degrees F on deep-fat thermometer.
3. Dip chicken in buttermilk, one piece at a time; shake off excess. Coat with flour mixture; shake off excess. Dip again in buttermilk and coat once more with flour mixture. Fry chicken, skin side down, 10 to 12 minutes or until browned. Turn and fry 12 to 14 minutes or until cooked through (170 degrees F for breast meat; 180 degrees for dark meat). Drain on paper towels; repeat with remaining chicken.
