Pico de Gallo with Mangos

My friend Zach made this delicious pico de gallo!!  I loved it.  I am definitely going to be making it soon.

Zach says, “Pico de gallo is super easy and easily adaptable to what you’ve got around. It’s a good side dish for any “scraps” that are laying around.  {It is also} good in tacos as well. Next time I think I’ll add more mango. Pico de gallo in Spanish means “beak of the rooster”. It’s not something to be taken seriously.”

Pico de Gallo with Mangos


  • a bunch of fresh cilantro
  • 3 roma tomatoes
  • 1 ripe mangos
  • half an onion
  • 1 poblano pepper
  • lime juice
  • dash of salt


1. Chop up the cilantro; you want about 1/4 cup.  Make a bed in the bowl.  Dice the 3 tomatoes, add to the bowl.  Cube the mango.  Add to the bowl.  Finely chop poblano pepper, add to the bowl.  Sprinkle salt over top.  Add lime juice, approx 2 tablespoons.

2. Toss it up.  Serve with chips.
