This weeks theme is 5 ingredients or less and I love that! I love when I can cook with only a few ingredients and make something really yummy. Not to mention it is cheaper (AND I can always use cheaper meals). These were simple and fast.
The cookbook I found this recipe in, Good Day for a Picnic by Jeremy Jackson, is super awesome! It is full of easy to make and transport food. Basically the way I want my food to be, in an ideal world. I don’t know if I agree these are easy to transport. Macaroons can be crumbly. Mine certainly were. But they taste so yummy! And it is on my 100, so I had to try. I will have to try again sometime. I love macaroons!
Honey Macaroons
This recipe is slightly adapted from Good Day for a Picnic by Jeremy Jackson.
Ingredients
- 2 1/4 cups finely shredded unsweetened coconut
- scant 1/2 cup honey
- 3 large egg whites
Directions
1. Preheat the oven to 325 degrees F. Line baking sheets with parchment paper.
2. Mix all ingredients together in a saucepan and stir over medium heat. Cook until it starts to steam for about a minute.
3. Scoop about 2-teaspoon portions of the mixture on to the baking sheets.
4. Bake for 12 to 16 minutes, until lightly browned and fragrant! Slide the parchment paper with the macaroons off the sheets and onto a cooling rack.

These look way too easy not to make them! My dad’s a huge fan of honey and coconut so I know what I’ll be making next week when I go to visit.
