Long time no see! I have been so uninspired lately. I have been busy and just not interested in doing all the work to make something yummy and then take the pictures and create a post. It was just too much. Therefore, I knew the only way that I would get back into the kitchen with some gusto would be to do some baking. I have been dying to make an upside down cake! So, when I was looking for recipes for this month’s love blog hop and stumbled upon a cranberry upside down cake- I was hooked! I also love bundt cakes, so I decided to put the cake in my bundt cake mold. It makes everything prettier. Don’t you think?
I had some left over bacon around the house and I did not feel like just frying it up. So I looked around for some recipes with bacon in it and I could not believe when I saw this recipe. It just sounded too good to be true.
I had a brunch!!! It was so much fun!! OMG, even in my tiny apartment. We were tight, but we all fit. Even with the cats.🙂 That is a picture of everyone in my kitchen. According to my mom, a one butt kitchen! Believe me, you do not want to cook with all those people in the kitchen. I don’t think you could move!
These are super yummy! You can use your favorite jam or if you want to finish off a jam jar. And you can mix and match flavors really easily too. The raspberry did not come out very strong in these. But they were still really great.
I already have all the ingredients for this recipe in my pantry. So no extra trips to the grocery store. I love to bake, so I keep my pantry pretty well stocked for baking, but it is unlikely that you will have to buy more than one or two ingredients for these muffins.
