This is crazy! I improvised! Normally, I strictly follow recipes. I am just not confident that I can alter something and it will still taste good. But today I did not have a recipe and so I was spontaneous.
AND IT WORKED!!!!! Ok, to start for #sundaysupper we are making something from Katie Workman’s cookbook. I don’t have the cookbook so I had to use one of the recipes that is online already. She has a parsley, lemon, rosemary roast chicken recipe that I thought might taste good grilled. Not to mention there is no way I am going to turn on the oven in this heat. (Also, I used parsley instead of rosemary. I forgot to buy rosemary.)
This was really good. Not as spicy as I had thought it would be. The blog I got it from said you could put all the ingredients in a blender to make the marinate. I might do that next time. See if it adds a little more kick.
Today was a stay inside all day and never leave the house sort of day. It was cold and windy outside and all I wanted to do was play with my cat, eat and read a book. This cake was super simple and I was able to use the rest of my lemon curd!!
Update: The cooling before refrigerating is a really important step. And if you forget it will not thicken properly. FYI
Yesterday was my fail day, but today was one big success after another!! This was super delicious and now I just have to figure out what to put it on. However, some of my friends are happy eating lemon curd straight off the spoon.
