Irish Carrot Potato Soup


Last but not least the soup!  This soup is pureed, so there are zero chunks of anything.  My friend, Leslie, has been to Ireland and is partially Irish.  She told me this is how it is done in Ireland.  Pureed soup.  Works for me.

Horse and Rider Cocktail

The drink pictured is one part apricot brandy and one part whisky.  My friend, Arbor, found the recipe.  He likes to sip his drinks and have them be really strong.  I, on the other hand, enjoy a bigger drink that won’t knock me out in one punch.

Irish Potato Casserole

For St. Paddy’s day I had a potluck/ everyone cook at my apt.  And it worked really well!  YAY!  I think I am going to have one once a month or so.  It really was a blast and was super easy.  I was kind of astonished how easy it was.  Just ask people to come and they make such amazing food and tell wonderful stories.  Yes, we will have to do this again!
