This is a very interesting dish. I love roasted cauliflower, so I thought this would be right up my alley. And it is, but wow this pesto is something else. It is nutty and sweet and goes really well with the cauliflower. It really changes the taste of the whole dish.
I have a lot of bread right now. Normally, this would be a wonderful thing, I love bread. However, I think I have had enough grains to last me all week. Oh well, I decided I should make something to put with the bread, so I don’t have to eat it all with butter.
I can’t decide how I feel about these. They taste just like Cheese Its. They have a bit more kick, but that’s adjustable. I just can’t decide if the effort to make them is worth the pay off? My coworker thought so, she ate half my batch and asked for the recipe.
